Elmeid Tavola exists to record and share the traditional home cooking of Sardinia. This page states plainly what that content is for, and what it is not for, so that no reader mistakes a recipe journal for something it never claims to be.

Our editorial preference for olive oil over vegetable and seed oils is exactly that, a preference rooted in the tradition we write about. Allergies and Dietary Restrictions
Sardinian cooking leans on sheep's milk cheese, wheat flour, honey, fish roe and cured meats, ingredients that are serious matters for people with allergies or intolerances. Read every ingredient list with your own restrictions in mind, check labels on the products you buy, and when in doubt about whether a dish is safe for you or a guest, ask a professional before cooking it, not after.
Food Safety at Home
Several of our recipes involve live flame, hot ovens, deep frying in olive oil, raw meat and long unrefrigerated rests. Follow sound food safety practice at every step: verify cooking temperatures with a thermometer where appropriate, keep raw and cooked foods separate, chill leftovers promptly, and never leave hot oil unattended. Responsibility for safe execution in your kitchen rests with you.
Results in Your Kitchen
Ovens run hot and cold, flours drink water differently, cheeses melt at their own pace, and an artichoke picked in April behaves unlike one picked in June. We test our recipes carefully, yet we cannot promise that your result will match ours on the first attempt or on the fifth. Variation is not failure; it is cooking.
Ingredient Notes
Where a traditional ingredient is hard to find outside the island, such as bottarga, fregola, corbezzolo honey or fresh myrtle, we suggest reasonable substitutes. Substitutions change flavor and texture, and we make no representation that a substituted dish is equivalent to the original.
